Barbacoa

Well as expected Lang smoker cookers are being all over the US and the world this summer. Barbecue has its roots in the Spanish word “barbacoa”.

The states have four distinct regional styles:

  • Carolina-style: Known for slow-smoked pork, often with a vinegar-based sauce in North Carolina (sometimes with a mustard base in South Carolina).
  • Memphis-style: Focuses heavily on pork, particularly ribs and pulled pork, with options for either “dry” rubs or “wet” sauces applied during smoking.
  • Texas-style: Famous for its beef brisket, often prepared with a dry rub and a thin “mop” sauce based on beef stock.
  • Kansas City-style: Notable for “burnt ends” (trimmings of smoked brisket) and a sweet, thick, tomato-based sauce, often employing oak or hickory wood for smoking.
